Eggs are growing in popularity, and consumption is rising. No longer restricted to a breakfast staple, eggs are cropping up on trendy menus and cooking programmes all over the place, oozing out of raviolis, encased in gourmet scotch eggs and taking the internet by storm, as cloud eggs.

Rapidly gaining superfood status, eggs are establishing themselves at the top table of ingredients. At the same time heritage brands sold as exclusive and up-market products in elegant outlets command premium prices. A sure sign that eggs are seen as less and less of a simple commodity.
